Organic mustard oil, whether cold-pressed or not, is primarily composed of fatty acids. It contains monounsaturated fats (around 60%), polyunsaturated fats (around 21%), and saturated fats (around 12%). The monounsaturated fats include erucic acid and oleic acid, while the polyunsaturated fats include omega-3 alpha-linolenic acid (ALA) and omega-6 linoleic acid (LA).
