Also known as Okra. It is a flowering plant known for its edible seed pods.
- Most commonly used as a stirfry or curry as a part of main couse. It is relished with phulka/ rice.
- In Rajasthan they use buttermilk in its preparation – Dahi Bindi ki sabji.
- In Kerala they make a coconut based aromatic gravy to create the dish Bindi Mappas.
- Bindi Til ka achar / pickle is also made.
- It can also be stuffed with besan , masalas and shallow fried
